1. Preparation:
-Bring to room temperature for 45 minutes before cooking.
-Pat dry the skin thoroughly.
-Season generously with salt, pepper, and fresh herbs.
-Rub with softened butter or olive oil for an extra-crispy finish.
2. Roasting Instructions:
-Preheat oven to 425°F.
-Place the Capon breast-side up on a rack or bed of vegetables.
-Roast at 425°F for 20 minutes, then reduce to 350°F.
-Continue roasting for 15–18 minutes per pound, depending on size.
-Baste occasionally for maximum flavor and golden skin.
3. Temperature Guide:
-Cook until the internal temperature reaches 160–165°F at the thickest part of the breast and thigh.
-Rest the Capon 20 minutes before carving to keep the juices inside.
