Cooking Suggestions

1) Let the Rôti come to room temperature for 1 -2 hours

2) Preheat your oven to 400°F.

3) Sear the Rôti on all sides until the bacon is browned

4) Place the Rôti on an oven-safe pan (uncovered). Then, roast for 35 - 40 minutes

5) Internal temperature should reach 140°F. - 145°F.

6) Allow the Rôti to rest for 10 minutes

7) Cut the Rôti into 1 - 1.5 inch thicks slices, removing and discarding the cotton butcher twine as you do.

8) The Rôti and now ready to serve.
