Cooking Suggestions

1. Bring to Room Temperature
-Remove Porchetta from the fridge 1 hour before cooking.
-Keep it uncovered to dry the skin—this helps achieve better crackling.

2. Oven Temperatures
-Start low: 275°F
-Finish high: 475°F (for crisping)

COOK TIMES:

5 LB PORCHETTA
-Low & Slow Roast: 275°F for 2.5–3 hours
Internal temperature target: 145–150°F.
-Crisp the Skin: Increase to 475°F for 15–20 minutes
Rotate if needed to crisp evenly.

*Total Time: ~3 to 3.5 hours

10 LB PORCHETTA
-Low & Slow Roast: 275°F for 4.5–5 hours
Internal temperature target: 145–150°F
-Crisp the Skin: Increase to 475°F for 20–25 minutes

*Total Time: ~5 to 5.5 hours

RESTING:
-Let the Porchetta rest 20–30 minutes before slicing.
This keeps the meat juicy and easier to carve.
