Cooking Suggestions

For a 2lb Lamb Loin Roast (Boneless)

In the Oven:

1) Preheat your oven to 400°F and
2) Season your roast with salt, pepper
3) Sear all sides of your lamb in a hot large saute pan over high-heat until it's golden brown
4) Place your lamb in the oven for 20 minutes, until medium-rare
5) Let rest for 10 mins before serving

On the Grill:
1) Season your roast with salt, pepper
2) Sear on all sides over high heat for about 15 mins, until it's golden brown
3) Place the lamb in indirect heat and cover loosely with aluminum foil for 15-20 mins
4) With a Meat Thermometer, check the internal temperature for the desired doneness:
- Rare: 115°F - 125°F
- Medium: 135°F - 145°F
- Well-Done: 165°F - 170°F
