The ideal oven cooking time for a chuck roast depends on your desired tenderness and the size of the roast. Generally, for a classic, fall-apart tender result, cook the chuck roast at 300–325°F for 3 to 5 hours, depending on its size and thickness. Most recipes recommend:
At least 2–3 hours at 300–325°F for a medium-rare to medium roast, or until the internal temperature reaches 125–145°F.
For fork-tender, shreddable meat, cook at 300°F for 3–5 hours, checking for doneness after 3 hours. The roast should pull apart easily with a fork when ready.
Always cover the roast during baking and add some liquid (like broth) to keep it moist. Let the roast rest for 10–15 minutes before slicing for best results.
