Turkey Roti with house stuffing from Olivier’s

- 1 of Olivier's turkey roti
- Olive oil
- Salt and black pepper, to taste

Heat oven to 325 degrees F. In the meantime, prep your turkey roti. Place roti in a roasting pan. Drizzle olive oil on top of skin, and sprinkle salt and pepper to your liking.
Place roti in the oven and bake for 1 hour and 30 minutes, or until the internal temperature reaches 155 degrees F (oven time varies by size of roti- could bake for more/less time based on weight). Rotate after the first 30 minutes. Flip roti over after 45 minutes.
Drizzle olive oil and season with S&P after flipping. Rotate the roti for the last 30 minutes.
*While your roti is in the oven, feel free to make side dishes or have a glass of wine!*
When your roti has reached 155 degrees, increase the heat to 375 and turn on the broiler. *Monitor your roti after the first few minutes; the skin should be golden brown, not black!
Flip over the roti and broil the top side. Again, carefully watching the skin.
Let rest in the roasting pan or on a cutting board for 10 minutes. Make a gravy, and feast!
