Roti de Boeuf
- 2 lb Beef roast (or get a Boeuf roti ready prepared at Olivier's)
- 6 Potatoes
- 3 Shallots
- 4 unpeeled cloves garlic
- 2 1/2 teaspoons butter
- 1/2 cup white wine
- Olive oil
- Sea Salt
Preheat your oven at 350F degrees.
In roasting pan over high heat, caramelize the surface of the roast on all side in some olive oil.
Peel the shallots and add them to them pan with the unpeeled garlic cloves.
Peel the potatoes, cut them in eight portions lengthwise, and arrange them around the roast. Pour the wine.
Cover and cook in 350F oven for 25 minutes or until the internal meat temperature reaches at 135F (for medium-rare). Add the butter and cook an additional 5 minutes.
Season and let rest for 5 minutes before serving
