A Simple Lamb Shank

    Ingredients

  • 2 Olivier's Lamb Shank
  • Chicken Stock
  • Berbere Spice
  • Cumin
  • Saffron
  • Garlic
  • Crushed Tomatoes
  • Turnips
  • Sliced Dates
  • Lemon Confit
  • Salt
  • Pepper
  • Fresh Cilantro
  • Mint

Directions

1.

Braise shank on stovetop or in oven on low heat for approximately 3 hours or until the meat is extremely tender.

2.

Cover with chicken stock and or water. Add the following to the liquid: Berbere Spice, cumin, saffron, garlic, crushed tomatoes, turnips, sliced dates, lemon confit. Season with salt and pepper, as needed.

Garnish with chopped fresh cilantro and mint prior to serving.
