POULTRY

Our birds are Free-range and pasture-raised. They are active, happy and have space to grow, which is why they are so flavorful.  Try our poultry whole or select specific parts: breast, leg and thigh, wings or even in our infamous “Roti”, which we deboned and stuffed for your convenience. Cook it, roast it, braise it…  you just can’t go wrong.

Our Coastal Hill Farm eggs are picked up weekly directly from the farm.  All of the birds are raised using mobile units that are moved throughout the ranch. These are “spoiled” birds.

The wing of the chicken consists of three sections, the wing tip, the wingette (or flat wing tip), and the drummette.

The entire breast portion of the chicken. It is available bone-in, boneless, skin-on and skinless. Consists of white meat only.

Very flavorful and moist meat. The bottom portion of the leg below the knee joint. Consists of all dark meat.

Leg and Thigh

Chicken thighs and leg consist of dark meat. They are flavorful, moist and are interestingly-textured,
especially when the skin is well crisped. There are many ways to cook chicken thighs: bake, broil, slow cook, fry or grill.
